Auricchio Pecorino Romano is one of Italy's most prestigious cheeses, carrying the D.O.P. Seal guaranteeing its quality and traditional production in Lazio and Sardinia. It is a hard, aged cheese, made from 100% pure sheep's milk. Aged for approximately 12 months, it develops a firm, crumbly, yet creamy texture and a pale colour.
